Winemaker Celestino Gaspari blends grapes from all 15 of his vineyards around Negrar into this wildly complex Veneto Rosso mosaic. Kairos is ancient greek meaning “at the right moment,” and Celestino releases this wine when he thinks the time is right — for Kairos 2011, that’s 4 years after aging (3 in French oak, 1 in the bottle).
This gregarious wine greets you with ripe italian plums and black cherries on the nose and palate, floral notes of violets and a melange of spices, like nutmeg, cinnamon, clove and alspice.
I’d pair Kairos with grilled red meats, wild boar stew, venison, or even a beefy ragù tossed with pasta.
